I love the heft of the knives
I love the heft of the knives. The balance is exquisite. The larger one is even handy for cleaning out peppers and other small vegetables. The smaller one of course, is light and nimble. I demand a knife that slices. Unlike most amateurs; I slice instead of chopping. Onions are a snap with the sharp edge slicing.
Unfortunately, they do not hold an edge for long! With that said, they sharpen easily. But, my time is better spent cutting/slicing instead of constantly sharpening.
